Walk through bakery equipment websites in different countries and you will quickly notice something confusing: what looks like almost the same mobile rack can be sold under several different names.
One supplier calls it a bakery rack trolley. Another calls it a sheet pan rack. In North America, bun pan rack is also common. Other listings use pan rack, tray rack, kolica za tepsiju or simply pekarska kolica.
In many cases, these names overlap.
What matters to a buyer is not so much what the rack is called, but what trays it holds, how many levels it has, how the trays are loaded, whether the dimensions match existing equipment, and what the rack is expected to do once it reaches the factory floor.
That distinction becomes especially important when sourcing equipment internationally.
Why does the same rack have so many names?
The terminology developed around local bakery and foodservice practices rather than one universal naming standard.
In North American commercial kitchens, sheet pan rack i bun pan rack are widely used for mobile racks designed to store and move sheet pans. Commercial equipment suppliers often use the two terms almost interchangeably, along with names such as pan rack and bakery rack.
“Speed rack” is another term that appears frequently in North American kitchens, particularly for mobile sheet pan racks used during prep, pečenje, cooling and staging.
In international bakery equipment sourcing, particularly where metric tray systems are used, pekarska kolica, bakery rack trolley i kolica za tepsiju are often more useful descriptions.
Our own product range, for example, is described as a Stainless Steel Baking Trolley, Stainless Steel Drying Trolley, Bakery Rack Trolley and Food Processing Tray Cart depending on the application.
The names change. The construction requirements still have to match the job.
What is a sheet pan rack?
A sheet pan rack is built around one basic idea: several sheet pans are held vertically on individual runners so that they can be stored or moved as one unit.
In the U.S. market, full-size and half-size sheet pans are common, and commercial racks are often described according to those pan formats. Full-size racks frequently accommodate 18 × 26 inch pans, while smaller racks may be designed around half-size pans.
That does not mean every sheet pan rack uses American tray dimensions.
For international bakery projects, metric tray sizes such as 600 × 400 mm are also common. The practical meaning of “sheet pan rack” is therefore less about one fixed dimension and more about a rack designed specifically around flat baking pans or trays.
When a customer asks for a sheet pan rack, the first question should be:
What size is the pan?
Without that information, the product name alone is not enough to manufacture the rack correctly.
Is a bun pan rack different from a sheet pan rack?
Usually, not by much.
In commercial foodservice, bun pan rack is commonly used as another name for a sheet pan rack. Restaurant equipment suppliers regularly group bun pan racks, sheet pan racks and bakery racks in the same product category.
Historically, the term makes sense because these racks are widely used for bread, buns, pastries and other bakery products.
But a modern bun pan rack is not limited to buns.
The same rack may hold dough during staging, finished products during cooling, empty trays between production runs or prepared food before the next processing step.
For an overseas buyer, searching both sheet pan rack i bun pan rack can therefore return similar products.
For a manufacturer, however, the drawing still needs to specify tray dimensions, rail spacing and rack capacity.
Where does “bakery rack” fit in?
Bakery rack is a broader term.
A sheet pan rack is normally designed around pans. A bakery rack may describe the same product, but it can also refer more generally to a mobile rack used for baking trays, hlađenje, proofing, handling or storage.
That broader meaning is useful in industrial bakery projects because the rack may perform several jobs during one production cycle.
A trolley might be loaded after dough preparation, moved into a holding area, used during cooling and later transferred to another section of the factory.
For this kind of application, bakery rack trolley ili pekarska kolica often describes the equipment more naturally than “sheet pan rack”.
This is particularly true when working with metric bakery systems.
Our standard tray compatibility includes 400 × 600 mm, 600 × 400 mm and 600 × 800 mm, with customized sizes available according to equipment dimensions and production-line requirements.
That is why simply asking for a “bakery rack” still leaves several important questions unanswered.
Pan rack and tray rack are broader again
The terms pan rack i tray rack are less specific.
They are useful because buyers may not know the exact industry terminology when they begin searching.
Someone looking for a stainless steel rack to move trays through a food factory may search for:
stainless steel tray rack, mobile tray rack, pan rack trolley, stalak za pečenje, stainless steel tray trolley
All of those searches can lead to broadly similar equipment.
From a manufacturing point of view, “tray rack” tells us very little about the final configuration.
A rack for baking trays may require one rail spacing. A rack for drying mesh trays may need another. A heavy food-processing tray may require a stronger frame and different casters.
So while tray rack trolley is a useful product term, the application determines the real design.
A bakery trolley is not automatically an oven trolley
This is one distinction worth taking seriously.
A mobile bakery rack used for storage, transport or cooling should not automatically be assumed to work inside an oven.
An oven trolley ili oven rack trolley may need to match a particular oven system, including the overall dimensions and tray arrangement. Compatibility should therefore be confirmed against the customer’s equipment rather than assumed from the words “bakery trolley”.
For buyers who need a rack for an existing oven, drawings and machine dimensions are much more useful than a general product photograph.
The safest approach is to specify the oven model or provide the available internal dimensions together with the tray size.
This is also why custom production is common in commercial bakery equipment.
Tray dimensions are more useful than product names
When two buyers ask for a 20-tier bakery rack, they may still need two completely different products.
One customer might be using 600 × 400 mm trays. Another may use 600 × 800 mm trays. Even if both require 20 levels, the width, depth, frame construction and loaded weight can be very different.
Our current range accommodates 400 × 600 mm, 600 × 400 mm and 600 × 800 mm formats, as well as customized tray sizes.
The same principle applies to tier spacing.
A rack may technically have 20 slides, but that does not always mean 20 loaded trays can be used for every product. Taller bread or pastry products need more clearance than flat items. Commercial pan-rack guides make the same point: rack capacity only makes sense when tray spacing and the height of the food on each tray are considered together.
This is one reason why “20 pan rack” should not be treated as a complete specification.
The tray itself changes the application
The rack name may remain the same even when the tray changes.
A solid sheet tray works well for many bakery and food-handling applications.
A perforated tray allows greater airflow and can be useful where circulation around the product is important.
Wire mesh trays provide still more open area and are well suited to drying applications.
The trolley range can be matched with perforated baking trays, wire mesh drying trays and solid sheet trays.
This means the same basic stainless steel rack concept can move beyond bakery production.
With a different tray system and spacing, it can become a food drying trolley for fruit, vegetables, herbs or other dehydration processes. The product specification also covers cooling, production-line transfer and temporary food storage.
Again, the application tells us more than the name.
Stainless steel or aluminum?
This is another area where regional product searches can create confusion.
Many sheet pan racks sold into restaurants and commercial kitchens are made from aluminum because it keeps the rack relatively light. Stainless steel versions are also widely available, particularly where buyers prioritize corrosion resistance, cleaning requirements or a more robust food-processing construction. Current commercial suppliers sell both materials within the same sheet-pan-rack category.
For our trolley range, the available materials are stainless steel 201, 304 i 316.
For most buyers, material choice should be based on actual working conditions rather than the terminology used in the product title.
A bakery rack used in a relatively dry environment has different requirements from a trolley that is frequently washed or used in a humid food-processing area.
Mobile rack or stationary rack?
Many of these products are fitted with casters because movement is part of their job.
Once trays are loaded, the complete rack can be moved between preparation, processing, cooling and storage areas without unloading every tray individually.
For a mobile rack, the wheels should be considered part of the equipment rather than a minor accessory.
The current trolley range supports PU, rubber and nylon casters with 360-degree swivel movement. Brake configurations are available with either two or four braked wheels.
A lightly loaded rack in a small bakery may not need the same caster specification as a heavy industrial trolley moved all day across a food factory.
That is why a good quotation should include the expected load and working environment, not just the number of tray levels.
So which name should you use when buying?
If you already know your tray standard, use that information first.
“600 × 400 mm stainless steel bakery trolley, 20 tiers” is much clearer than simply asking for a bakery rack.
For North American commercial foodservice applications, sheet pan rack ili bun pan rack may be the most familiar search term.
For commercial bakery projects using metric trays, bakery rack trolley, pekarska kolica i kolica za tepsiju are often useful terms.
For broader food-processing applications, stainless steel tray trolley ili food processing tray cart may describe the equipment more accurately.
And if the rack needs to work inside a specific oven or dryer, mention the equipment from the beginning.
The terminology helps buyers find the product. The dimensions determine whether it actually works.
What information matters when requesting a quotation?
Whether the inquiry says bakery rack, sheet pan rack or bun pan rack, a useful RFQ should contain the same basic information: tray dimensions, required number of levels, spacing between trays if critical, overall size restrictions, stainless steel grade, expected load, caster requirements, application and required quantity.
If the rack needs to match an existing oven, drying machine or production line, adding a drawing or equipment dimensions usually saves time.
That information allows the trolley to be designed around the customer’s production process instead of forcing the process to fit a standard rack.
The name matters for search. The specification matters for production.
Bakery rack, sheet pan rack, bun pan rack, pan rack and tray rack are not five completely separate products.
They are overlapping terms that developed around different markets, tray systems and applications.
For buyers, understanding those names makes it easier to search internationally and compare suppliers.
For manufacturers, however, the important details remain much more practical: the tray has to fit, the spacing has to suit the product, the rack has to carry the load, and the trolley has to move safely through the customer’s production area.
Once those details are clear, choosing between a standard bakery rack trolley and a customized stainless steel tray trolley becomes much simpler.
