316 provides still higher corrosion resistance for special environments.

For many commercial food-drying projects, 304 stainless steel drying trolleys are worth considering because the equipment is being used in a food-processing environment and may require regular cleaning.

The final decision should still depend on the working conditions rather than using one grade for every project.

If the environment is relatively straightforward and cost is a major concern, 201 may still be considered.

A drying trolley may carry less weight but work for longer periods

Load capacity remains important, even where the product itself is relatively light.

The best wheel depends on the production environment.

A mobile drying trolley makes more sense when trays need to move through several stages.

Dimensional accuracy becomes particularly important when several trolleys must fit the same dryer.

One correctly sized sample is useful. A production batch in which every trolley is consistently sized is more important.

The drying product should determine the rack

A better starting point is:

“We are drying sliced vegetables on 600 × 400 mm mesh trays, and the rack must fit inside this machine.”

That immediately defines the real design problem.

The number of tiers can then be decided according to the available height, product thickness and tray spacing.

The same applies to fruit, herbs and other food products.

A drying trolley should fit the process, not the other way around.

Final note

There is no universal food drying trolley that works equally well for every product.

Fruit, vegetables and herbs may all use the same basic stainless steel rack structure, but tray design, spacing, capacity and overall dimensions can be different.

The most useful information to establish first is:

what is being dried, what tray is being used, how much spacing is needed, and what equipment the trolley must fit.

Once those points are clear, material, tier count, wheels and frame design become much easier to specify.

For existing drying systems, sending the tray dimensions and dryer dimensions is usually the fastest way to develop the right trolley configuration.
